Vegan Creamed Spinach

  1. soak cashews in water for at least 2h
  2. Dice onion and mince garlic
  3. Sautee onion for 3-5min until transparent
  4. Add garlic and continue for at most 1min
  5. Add spinach and let it wilt (1)
  6. Blend cashews with broth until as smooth as possible
  7. Pour over spinach and mix well
  8. Bring to a boil, then simmer for another 5min
  9. Season with salt, pepper and nutmeg

Notes

(1) If using frozen spinach, unfreeze separately to ensure onions and garlic don't burn
