Vegan Creamed Spinach

cashews

vegetable broth

clove garlic

yeast flakes
- 1
tsp
nutmeg or to taste
- 1
tsp
salt or to taste
- 1
Tbsp
pepper or to taste
- soak cashews in water for at least 2h
- Dice onion and mince garlic
- Sautee onion for 3-5min until transparent
- Add garlic and continue for at most 1min
- Add spinach and let it wilt (1)
- Blend cashews with broth until as smooth as possible
- Pour over spinach and mix well
- Bring to a boil, then simmer for another 5min
- Season with salt, pepper and nutmeg
Notes
(1) If using frozen spinach, unfreeze separately to ensure onions and garlic don't burn
