Tomato Mascarpone Pasta

  1. Dice onion and mince garlic
  2. Sautee onion in olive oil until transparent, add garlic and herbs and continue for 30s
  3. Add tomatoes, tomato paste and vinegar, then simmer for 5min
  4. Add hot water and pasta, simmer for 10-12min until pasta is done, add more water if needed
  5. Mix in spinach, basil and butter, reduce heat
  6. Season with salt and pepper and add mascarpone
  7. Keep stirring until mascarpone is fully molten and incorporated
