balsamic vinegar

fresh spinach

Tbsp olive oil for sauteeing
- 1
tsp salt or to taste
- 1
Tbsp pepper to taste
- Dice onion and mince garlic
- Sautee onion in olive oil until transparent, add garlic and herbs and continue for 30s
- Add tomatoes, tomato paste and vinegar, then simmer for 5min
- Add hot water and pasta, simmer for 10-12min until pasta is done, add more water if needed
- Mix in spinach, basil and butter, reduce heat
- Season with salt and pepper and add mascarpone
- Keep stirring until mascarpone is fully molten and incorporated
