Pea Stew

peas (cooked or only soaked)

- Dice onion, potatoes, carrots, celery and mince garlic
- Saute onions for 3-5min in oil
- Add garlic and continue sauteeing for 30s
- Add potatoes, carrots, celery and herbs, braise for 1min, then add vegetable broth
- Mix cream and starch in a separate bowl
- Cook until vegetables are done, then add cream and wine
- Add peas and let simmer for another 5min (1)
- Season to taste

(1) If not using precooked peas, add them once the broth has been added so they can finish cooking
