- Chop bamboo shoots and add salt
- Heat oil in a pan anda saute until the oil has been mostly absorbed
- Mix sugar and soy sauce and add to pan
- Add stock and bring to a boil
- Reduce heat and simmer until water has almost fully evaporated
- Add chili oil
