Lye Rolls

Lye

  • 50 g baking soda
  • 1 tsp salt
  • 1 l water
  1. Combine all dough ingredients and knead into a smooth dough
  2. Let dough rest until volume doubled
  3. Mix lye ingredients
  4. Separate dough into about 12 equal size pieces and form them into bread rolls
  5. Dunk each roll into lye for about 30s
  6. Let rolls rest on a baking tray for another 30min
  7. Preheat oven to 220C convection
  8. Bake for about 15min
