Lentil Loaf

  1. Soak lentils over night
  2. Preheat oven to 180C convection (200 upper/lower)
  3. Cook lentils, grind flax seeds and dice carrot, onion and mushrooms
  4. Combine all ingredients except jam and ketchup in a mixer and mix together, then season with salt and pepper (1)
  5. Form the mass into a loaf or put into baking form
  6. Bake for 30min
  7. Mix ketchup and jam and spread on the loaf
  8. Bake for another 20min
  9. Cool down for 15min

Notes

(1) Can be mixed to any consistency, but make sure the final mixture can be formed into a loaf
