Bagels

  1. Mix flour, yeast, sugar and salt, and melt butter
  2. Add water and butter and knead into a smooth dough
  3. Rest for 1h
  4. Separated dough into 8 pieces, form them into 3-5cm long sausages and knead the ends together
  5. Rest for another 30min, then preheat oven to 200C convection
  6. Melt honey in 2 Tbsp of hot water and mix egg yolk with milk
  7. Brush bagels with honey water and egg mixture
  8. Bake for 20min

Notes

Leave out egg yolk during brushing for a vegan version
