Aquafaba (1)

mustard or sweet mustard
- 0.5
tsp
salt
- 0.5
tsp
apple cider vinegar
- 1
tsp
maple syrup or honey or agave syrup
- 250
ml
neutral oil (2)
- Combine all ingredients except oil in a tall container
- Pulse with hand mixer until aquafaba hardens
- Slowly add oil 1-2 Tbsp at a time while continuously pulsing the mixer
- Let rest in the fridge for at least 2h
Notes
(1) Chickpea water, either use water from canned chickpeas or cooking water from raw chickpeas
(2) sunflower, rapeseed or avocado oil is best
