frying oil
- Press out tofu water
- Cut tofu into thin sliced (the thinner the better)
- Preheat oil to medium heat (120-150C)
- Fry tofu once, remove from oil and pat dry
- Heat oil to high temperature (200-250C)
- Fry tofu again, remove from oil and pat dry
